Maju: You guessed it right. Cholesterol is not our concern but oil is :-)! But I suppose clarified butter; also, "extra virgin" coconut oil probably okay for deep frying.
Manju: I think my stupid question is the result of an unreasonable desire for an uncompromising approach. An alternative approach gives a feeling of an artificial gratification.

Non Oily Oil should do the trick!
But,it would be called roasting..
Use butter. It's worse for cholesterol but is much less likely to sprinkle around - the resulting flavor is also sweeter.

Just bake it. I make my koftas by baking. It has come out good and is much healthier compared to frying.
